I have to give credit for the best salad on earth to my brother Scott! He made this a few years back and I fell in love with this. Mexican food is my favorite and this salad is amazing.

Healthy Ice Cream?
Can this be true? Healthy ice cream? Well it’s more like a sorbet But with two ingredients! Continue reading
Is it Lasagna or Manicotti?
I am not the cook in the family but one thing I do love to make is Manicotti. I usually use the jumbo shells but I wanted to try something a little different this time and use Lasagna noodles. I love this idea of individual pieces that could really be filled with many different ingredients, especially if your guests have individual requests. Sometimes, when I make Lasagna, I make half of the pan vegetarian so using the noodle rolled up would make that even easier. Continue reading
The Best Lemon Bars
I found this lemon bar recipe in one of our old church cook books. When I say old I mean from when we were kids so kind of old. These taste like a crumbly sugar cookie with a light lemon top. It’s not over the top lemony which is what I like. Continue reading
Creamy California BLT Salad
BLT’s are one of my favorite sandwiches, I just love the creamy freshness of it. I also love avocado so what could be better than adding a little California in it! Instead of a sandwich this is a great salad that merges these flavors together. Continue reading
Raspberry Pretzel Dessert
Growing up my mom would make a dessert that will always be one of my all-time favorites. This is the perfect combination of salty and sweet. What a beautiful dessert for the 4th of July – just add fresh blueberries to the top for a red, white and blue look. Continue reading
Pinkalicious Pink Lemonade Cake Pops
There are two things we love in our house, pink and sweet. Okay not all of us but all the females in the house. Poor Farm Boy!
I also love making truffles so I am shocked that I haven’t made cake pops sooner. I was shopping at Target and saw this pink lemonade cake mix. It sounded so yummy and perfect for my first attempt at this. Continue reading
Microwave Caramel Puffcorn in 10 Minutes
I love-making caramel puffcorn! I for sure make it every Christmas – I love how it makes the house smell. The one thing that is a bit of a pain is the hour it takes and the multiple stirring times. I found a few microwave versions but really like this one the best because it really coats all the corn and I did a few things a little different. 10 minutes vs. 60 minutes and it tastes the same! Continue reading
Ricotta and Ham Calzone
I, Farm Boy, love-making homemade pizza but wanted to try something a little different. After Easter we had some leftover ham, just a little! Most went home with family members in our to go boxes but we still had a lot left. I found this recipe from Mario Batali that looked really delicious. Honestly you can only make so much ham and bean soup or mac and cheese with leftover ham! Continue reading
